Considered the king among lentil varieties, the peppery Puy lentil was historically only grown in the volcanic soils of the Le Puy region in France. Now, they are also farmed in North America and Italy. Particularly favoured in salads for its rich flavour, Puy lentils cook slower than other varieties.
